Ingredients
  • 1 ½ pounds new white or red potatoes about 1 inch in diameter
  • 3 garlic cloves
  • ¼ cup extra-virgin olive oil
  • 1 ½ teaspoons salt
  • 1 teaspoon freshly ground black pepper
Instructions
  • Preheat the oven to 400 degrees Fahrenheit.
  • Scrub the potatoes and pat dry completely before using. Peel, trim, and mince the garlic.
  • In a medium bowl, combine all the ingredients. Arrange the potatoes on a baking sheet and roast for 40 minutes, or until tender and golden brown. Let cool on the baking sheet.
