To Roast Plum Tomatoes
Sweet and tangy roasted plum tomatoes, seasoned with olive oil, salt, and pepper, caramelize beautifully in the oven, making a perfect addition to any dish or as a flavorful side.
Ingredients
- 20 red or yellow plum tomatoes
- 3 tablespoons of extra-virgin olive oil
- 1 teaspoon of salt or to taste
- 1 teaspoon of freshly ground black pepper or to taste
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Wash the tomatoes and halve them lengthwise, from top to bottom.
- In a large bowl, combine the tomato halves, olive oil, salt and pepper to taste and toss to coat the tomatoes. Place the tomatoes, cut side up, in one layer on a large baking sheet and roast until the edges start to caramelize, about 35 minutes. Let cool on the baking sheet. Store in a covered container in the refrigerator for 1 week.
