Instructions
Preheat the oven to 400 degrees Fahrenheit.
Wash the tomatoes and halve them lengthwise, from top to bottom.
In a large bowl, combine the tomato halves, olive oil, salt and pepper to taste and toss to coat the tomatoes. Place the tomatoes, cut side up, in one layer on a large baking sheet and roast until the edges start to caramelize, about 35 minutes. Let cool on the baking sheet. Store in a covered container in the refrigerator for 1 week.
