Cucumber, Avocado, Scallion, and Lime Salad
Crisp cucumbers, smooth avocados, and the bite of fresh lime make a wonderful combination. This is simple to prepare and best made at the last minute. It
goes beautifully with simply grilled or roasted fish and is exquisite with the Mexican-inspired red snapper we suggest below.
Ingredients
- 3 cucumbers
- 3 ripe Hass avocados
- ¼ cup chopped scallions white and green parts
- Juice of 2 limes
- ¼ cup extra-virgin olive oil
- Salt
- Freshly cracked black pepper
- SERVE WITH: Pan-Fried Ancho Chile-Rubbed Red Snapper
Instructions
- Peel the cucumbers, slice each length- wise, and halve the slices. Cut out the seeds on each slice; then cut the cucumber crosswise into half-moons.
- Put in a ceramic or glass serving bowl.
- Cut each avocado in half, remove the pit, and with a small spoon, scoop out the flesh, and place in the bowl with the cucumbers.
- Add the scallions, lime juice, and olive oil, toss to combine, and season with salt and cracked pepper. Serve immediately.
