Cucumber, Avocado, Scallion, and Lime Salad

Crisp cucumbers, smooth avocados, and the bite of fresh lime make a wonderful combination. This is simple to prepare and best made at the last minute. It
goes beautifully with simply grilled or roasted fish and is exquisite with the Mexican-inspired red snapper we suggest below.

3 cucumbers 3 ripe Hass avocados ¼ cup chopped scallions white and green parts Juice of 2 limes ¼ cup extra-virgin olive oil Salt Freshly cracked black pepper SERVE WITH: Pan-Fried Ancho Chile-Rubbed Red Snapper
Peel the cucumbers, slice each length- wise, and halve the slices. Cut out the seeds on each slice; then cut the cucumber crosswise into half-moons.
Put in a ceramic or glass serving bowl.
Cut each avocado in half, remove the pit, and with a small spoon, scoop out the flesh, and place in the bowl with the cucumbers.
Add the scallions, lime juice, and olive oil, toss to combine, and season with salt and cracked pepper. Serve immediately.
