Ingredients
  • ½ of a cup of balsamic vinegar
  • 1 ½ pounds of medium zucchini
  • 3 tablespoons of extra-virgin olive oil
  • Salt
  • Freshly ground black pepper
Instructions
  • Preheat the oven to 400 degrees Fahrenheit.
  • In a small saucepan, bring the balsamic vinegar to a boil and boil it rapidly over high heat until reduced to a syrupy consistency, about 5 minutes. Let cool.
  • Wash and dry the zucchini. Trim the ends, then slice on the diagonal into ⅜-inch-thick ovals. Put the slices in a bowl and add the olive oil, reduced balsamic vinegar, and salt and pepper to taste. Toss the zucchini to coat.
  • Arrange the zucchini slices in a single layer on a large baking sheet and roast until the edges start to brown, about 20 to 25 minutes. Let cool on the baking sheet. Store in a covered container in the refrigerator for up to 2 days.
