To Roast Zucchini Slices
Roasted zucchini slices, seasoned with olive oil, balsamic glaze, salt, and pepper, develop a rich caramelized flavor and tender texture, making them an irresistible side dish.
Ingredients
- ½ of a cup of balsamic vinegar
- 1 ½ pounds of medium zucchini
- 3 tablespoons of extra-virgin olive oil
- Salt
- Freshly ground black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- In a small saucepan, bring the balsamic vinegar to a boil and boil it rapidly over high heat until reduced to a syrupy consistency, about 5 minutes. Let cool.
- Wash and dry the zucchini. Trim the ends, then slice on the diagonal into ⅜-inch-thick ovals. Put the slices in a bowl and add the olive oil, reduced balsamic vinegar, and salt and pepper to taste. Toss the zucchini to coat.
