Smoked mozzarella serves as the perfect counterpoint to the juiciness of roasted tomatoes here. Warming these sandwiches in the oven so that the cheese has barely melted makes this combination totally unforgettable. Good country bread is a must. Smoked mozzarella is becoming more widely available, but if you can't find it, fresh mozzarella can be substituted. It won't be the same sandwich, but it will still be very good.

Ingredients
  • 1 ½ pounds smoked mozzarella
  • 6 tablespoons mayonnaise
  • 12 slices of country bread
  • 8 ounces baby spinach or very tender spinach leaves stemmed
  • 24 roasted plum tomato halves
Instructions
  • Preheat the oven to 350 degrees Fahrenheit.
  • Slice the mozzarella.
  • Arrange the ingredients in front of you on the counter. Spread mayonnaise on 6 of the bread slices. On the remaining 6 slices, place a layer of spinach, covering the slice completely; top with 4 roasted tomato halves, and cover them with slices of the smoked mozzarella.
  • Place all 12 slices of bread, mozzarella and mayonnaise sides up, on a baking sheet and bake for 10 minutes. Remove from the oven, assemble the sandwiches, cut in half, and serve.
