We have used champagne vinegar in our house dressing from the day Mangia opened in 1982. If you don’t have any, use good-quality white wine vinegar instead. 

1 cup Mangia’s vinaigrette (www.mangia.nyc/blog/mangia-vinaigrette/)

1 teaspoon Dijon mustard

1 extra-large egg

In a small bowl, whisk all the ingredients together until creamy. Keep covered, in the refrigerator for 2 to 3 days. 

Makes 1 ½ cups
