Honey Bran Muffins

We can't call these "healthy" muffins despite the amount of bran we use in them. We can call these good, moist, honey-flavored, and raisin-filled, though, and we know a basket of these at breakfast makes a great start to any day.

Ingredients
  • 2 ½ cups bran not bran cereal
  • 2 cups whole-wheat flour
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • Pinch of salt
  • 10 tablespoons which is 1 ¼sticks of unsalted butter
  • 1 small Granny Smith apple
  • 1 large egg
  • 1 ½ cups whole milk
  • ¾ cup honey
  • ¼ cup soy oil or safflower oil
  • 1 ¼ cups dark raisins
Instructions
  • Preheat the oven to 350 degrees Fahrenheit. Grease and flour muffin cups.
  • Into a large bowl, sift together the bran, whole-wheat flour, baking powder, baking soda, and salt.
  • In a small saucepan, melt the butter; set aside to cool.
  • Peel, core, and grate the apple.
  • In a medium bowl, lightly beat the egg. Add the grated apple, and stir to combine. Stir in the butter, milk, honey, oil, and raisins until blended.
  • Add the wet ingredients to the dry ones and blend just until no streaks of flour show.
  • Spoon the batter into the prepared muffin cups, filling each three-quarters full. Bake about 40 minutes, until the tops spring back when lightly touched. Let the muffins cool in the pan and serve them warm or at room temperature. Store, well wrapped in plastic, at room temperature or in the freezer.
