Fresh Mozzarella, Tomato, and Cracked Black Pepper on Focaccia
These panini are so simple to prepare and so delicious, that they should become a summer staple when tomato season is in swing. Use only fresh mozzarella and luscious, juicy tomatoes. If you can't find focaccia, try country bread-just toast the slices in the oven at 350 degrees Fahrenheit for 5 minutes. (If the slices are too big, cut the 6 slices in half before toasting. These are best bite size.) When the ingredients here are at peak, all in top form, these are true works of art.
Ingredients
- 1 pound of fresh mozzarella
- 2 ripe beefsteak tomatoes
- 6 focaccia rolls or a slab of focaccia bread cut into 6 equal pieces
- 3 tablespoons of extra-virgin olive oil
- 1 tablespoon of salt
- 2 tablespoons of freshly cracked black pepper
Instructions
- Slice the mozzarella as thin as possible.
- Wash, then slice the tomatoes as thin as possible.
- To assemble panini, slice the focaccia rolls in half. On each bottom half, alternate 1 slice of mozzarella and 1 slice of tomato until the bread is covered. Drizzle with olive oil, sprinkle with salt and a generous amount of cracked black pepper, and cover with the top of the roll. Slice in half and serve.
