Celebrate the fall season in good spirits. These creamy, dreamy drinks come together quickly and are perfect for sipping fireside.
1) Pumpkin Eggnog
PREP 20mins
Chill 4 hours
- 12 egg yolks
- 3 cups heavy cream
- 2 1/2 cups milk
- 1 1/3 cups sugar
- 3/4 cup canned pumpkin
- 2 Tbsp. vanilla
- 2 tsp. pumpkin pie spice
- Star anise of freshly grated nutmeg (optional)
In a large heavy saucepan combine egg yolks, 1 cup of the cream, 1 cup of the milk and the sugar. Cook and stir over medium about 5 minutes or until mixture just coats a metal spoon; do not boil. Pour mixture through a fine-mesh sieve into a pitcher. Stir in remaining 2 cups cream, remaining 1 1/2 cups milk, the pumpkin, vanilla and pumpkin pie spice. Set pitcher in a large bowl of ice water; stir 2 minutes. Cover; chill 4 to 24 hours. Top each serving with a star anise or nutmeg. Makes 8 servings (1 cup each)
2) Pumpkin white Russian
Start to finish: 5 mins
- 2 tbsp half-and-half
- 2 tbsp canned pumpkin
- 1 tsp packed brown sugar
- 3 tbsp (1 1/2 0z) vodka
- 2 tbsp (1oz) coffee liquer
- ice cubes
- heavy cream (optional)
In a small bowl whisk together half-and-half, pumpkin and brown sugar. In an ice-filled rocks glass combine vodka and coffee liqueur. Gently drizzle pumpkin mixture on top. Add a splash of cream (if using). Makes 1 serving (2/3 cup).
3) Spiced Pumpkin Horchatas
Start to Finish 10 mins
- 1 1/2 cups refrigerated rice milk or coconut milk
- 1 banana, peeled, cut up and frozen
- 1/3 cup canned pumpkin
- 1/4 cup cooked brown or white rice, chilled
- 2 tbsp packed brown sugar
- 1 tsp vanilla
- 1/4 tsp ground cinnamon
- 1/4 cup (4oz) rum (optional)
- ice cubes
- cinnamon sticks (optional)
In a blender combine first seven ingredients (through cinnamon) and rum (if using). Cover and blend until smooth. Serve in ice-filled glasses. Add cinnamon sticks (if using) or sprinkle with additional cinnamon. Makes 2 servings.
4) Pumpkin Brandy Alexander
Start to Finish 5 minutes
- 1 Tbsp sugar
- 1 tsp pumpkin pie spice
- ice cubes
- 3 tbsp 1 1/2 oz brandy
- 3 tbsp brewed espresso or coffee
- 3 tbsp canned pumpkin
- 2 tbsp hald and half or whole milk
- 1 tbsp pure maple syrup
- Star anise (optional)
In a shallow dish combine sugar and pumpkin pie spice. Wet the rim of a martini glass with a damp paper towel. Dip rim in spice mixture to coat.
In a cocktail shaker half-filled with ice combine brandy , espresso, pumpkin, half-and-half, and maple syrup. Cover and shake until very cold. Strain liquid into prepared glass. Top with a star anise (if using). Makes one serving.
