We love croutons at Mangia and make several different kinds. These are the ones we use in our Caesar Salad. Snack on them, add them to soups, toss a few into other green salads.
The concern with croutons is not how to use them, but how to keep them in store. They are addictive.

Ingredients
1small loaf country breadabout 2 pounds
½cupextra-virgin olive oil
½teaspoonsalt
½teaspoonfreshly ground black pepper
Instructions
Preheat the oven to 350 degrees Fahrenheit.
Cut the bread into 1-inch cubes. Put them in a bowl and add the olive oil, salt, and pepper. Toss to coat.
Spread the bread cubes in a single layer on a baking sheet and bake for 30 minutes, turning once, or until golden. Store in an airtight container for up to 3 days.
